SERVES 4 TO 6
I tell folks who are just getting interested in smoking meats that you can just about smoke anything they might like to eat—for example, mushrooms. These make a decadent side dish for grilled steaks and for smoked brisket
INGREDIENTS
- 4 cups baby bella mushrooms
- 2 tablespoons butter, melted
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon pepper
- OPTIONAL: flat-leaf parsley, chopped
DIRECTIONS
1. Using a mushroom brush or pastry brush or just your fingers and a paper towel, gently brush any dirt off the mushrooms and clean them as well as you can.
2. In a medium bowl, combine the melted butter and the seasonings. Gently toss in the mushrooms, making sure to coat them with the butter mixture while not letting them tear. Transfer the mushrooms to a medium aluminum pan and spread them out so they’re not sitting on top of one another.
3. When ready to cook, preheat the smoker to 250°F.
4. Place the pan containing the mushrooms in the smoker. Smoke the mushrooms in the pan for 30 minutes.
5. Serve the mushrooms warm with a little chopped parsley on top, if you like.
