Greenfield Farms Casserole

For ½ Restaurant Pan

INGREDIENTS

  • 4 small Zucchini
  • 4 Small Yellow Squash
  • 4 Medium Tomatoes
  • 1 Medium Sweet Onion
  • 1 Stick Butter
  • Your Favorite BBQ Rub
  • 8 oz. of Cheddar Cheese Shredded

 DIRECTIONS

  1. Set Smoker to 300 degrees.
  2. Cut up Squash and Zucchini and put in pan. Slice tomatoes and put in pan. Cut up onion and spread out across pan. Put a coat of rub on top (Your choice as to how heavy you want it seasoned). Cut butter and layer across pan.
  3. Put in smoker uncovered for 1 hour. After 1 hour bring in and drain a little of the liquid in the pan. Put 8 oz. of shredded cheddar cheese on top and return to the smoker for another hour. 
  4. Bring in and serve.
