For ½ Restaurant Pan
INGREDIENTS
- 4 small Zucchini
- 4 Small Yellow Squash
- 4 Medium Tomatoes
- 1 Medium Sweet Onion
- 1 Stick Butter
- Your Favorite BBQ Rub
- 8 oz. of Cheddar Cheese Shredded
DIRECTIONS
- Set Smoker to 300 degrees.
- Cut up Squash and Zucchini and put in pan. Slice tomatoes and put in pan. Cut up onion and spread out across pan. Put a coat of rub on top (Your choice as to how heavy you want it seasoned). Cut butter and layer across pan.
- Put in smoker uncovered for 1 hour. After 1 hour bring in and drain a little of the liquid in the pan. Put 8 oz. of shredded cheddar cheese on top and return to the smoker for another hour.
- Bring in and serve.
