BBQ PASTA SALAD

Great side dish for a BBQ.

INGREDIENTS

  • 1 box rotini pasta
  • 1lb smoked sausage
  • 1 cup chopped broccoli florets
  • 1 cup grape tomatoes halved
  • 1/4 cup diced red onion
  • 1/4 cup sliced black olives
  • 8oz cheddar cheese cubed
  • 1/2 cup Mayo
  • 1/2 cup Italian Dressing
  • 1 teaspoon coarse black pepper

DIRECTIONS

  1. Slice the smoked sausage into bite size pieces and place on a foil lined baking tray. Put your favorite BBQ rub on the smoked sausage. Place on a smoker at 275 degrees for 30-35 minutes until brown on outside. Drain on paper towel to remove excess grease.
  2. Boil pasta according to package directions and strain.
  3. Combine the mayo with Italian dressing and season with coarse black pepper.  
  4. In a large bowl add pasta along with the smoked sausage, cheese, and vegetables.  Add the dressing and gently toss until everything is coated.  Place in the refrigerator covered for 1 hour before serving.
