Great side dish for a BBQ.
INGREDIENTS
- 1 box rotini pasta
- 1lb smoked sausage
- 1 cup chopped broccoli florets
- 1 cup grape tomatoes halved
- 1/4 cup diced red onion
- 1/4 cup sliced black olives
- 8oz cheddar cheese cubed
- 1/2 cup Mayo
- 1/2 cup Italian Dressing
- 1 teaspoon coarse black pepper
DIRECTIONS
- Slice the smoked sausage into bite size pieces and place on a foil lined baking tray. Put your favorite BBQ rub on the smoked sausage. Place on a smoker at 275 degrees for 30-35 minutes until brown on outside. Drain on paper towel to remove excess grease.
- Boil pasta according to package directions and strain.
- Combine the mayo with Italian dressing and season with coarse black pepper.
- In a large bowl add pasta along with the smoked sausage, cheese, and vegetables. Add the dressing and gently toss until everything is coated. Place in the refrigerator covered for 1 hour before serving.
